Kanetsugu Saiun Santoku Knife VG-10 Damascus Steel–170mm


The Santoku is a general-purpose kitchen knife with flat edge and a sheepsfoot blade that curves at a 60 degree angle towards the point. Santoku knives are perfect for slicing, dicing, mincing, and many other general cutting tasks.  The handle and blade are designed to be evenly balanced in the hand for exceptional control.  These professional Japanese kitchen knives are made from forge-layered VG-10 Damascus steel (total of 33 layers, HRc. 60-61), and feature Kanetsugu’s famous convex Hamaguri-ba blade profile.  The wood-grain, lightweight ergonomic handles are fashioned from black linen micarta imported from Spain.
