We are proud to be the exclusive U.S. provider of Kanetsugu Saiun professional Japanese kitchen knives. Handcrafted in Seki City, Japan, the capital of traditional Japanese knife making, these Damascus steel knives are renowned for their sharpness, durability, and high-quality craftsmanship.

The traditions and techniques of the Kantesugu swordsmiths date back to Japan’s Teiwa period/Jowa era (1345-1349), and have been faithfully passed down from master to apprentice for over 660 years.  Mr. Mitsuyasu Kawamura, the current generation Kanetsugu smith and owner, has created this collection with the intention of bringing the legendary sharpness of the katana to modern Japanese kitchen knives.

Forge Layered VG-10 Damascus Steel

These professional Japanese knives are made from forge-layered VG-10 Damascus steel (total of 33 layers, HRc. 60-61), and feature Kanetsugu’s famous convex Hamaguri-ba blade profile.  The lightweight ergonomic handles are fashioned from shrink-proof, water-resistant black linen micarta imported from Spain.  Elegant, well-balanced, and razor sharp; these knives are ideal for professional chefs or home cooks alike.
