I spent 2 days photographing the 24th Annual US Pastry Competition sponsored by Paris Goumet. during which I was constantly amazed at what these chefs were able to do with sugar and chocolate. I also consumed an incredible amount of sugar.......and chocolate......and gelato......and cake......

Working with 200 chefs to produce a book involves a lot. Many of the photo shoots are un eventful. This one with Jean-Georges was terrific.
