Alex Madrigal is Head Pastry Chef of CEDIS, the commissary of Palace Resorts in Cancun, Mexico. On a regular day, the CEDIS team can produce more than 14,000 chocolate handmade bonbons, 9,000 dessert mousses & cakes, and 12,000 croissants! They also develop and create new pastries for Palace Resorts.
Chef Madrigal studied patisserie in France at the University of Cergy Pontoise in Paris. While there he worked at the Four Seasons George V with their pastry team, before deciding to travel around the world on a search to improve his pastry skills and learn as much as he could. He spent time in Taiwan working for the World Chocolate Wonderland, which is a chocolate museum in Taipei city, and was in charge of the production team making chocolate showpieces and developing new products. He has also worked with two of the best chocolate chefs in the world: the great chocolatier of Latin America Jose Ramon Castillo, owner of Que Bo! as Sous Chef, and Jean Francois Suteau World Chocolate Master US 2013 as his Assistant Chocolatier at the Greenbrier in West Virginia.
In his off time Chef Madrigal is also a musician, and chocolate lover.
