I was recently on shoot at Le Bernardin with Chef Eric Ripert for my new book “Salads”. Eric brought out a plastic container wrapped in plastic wrap and tapped shut. Inside was a white truffle worth about $400.00. Eric sliced about half of it onto a plate. After arranging it with lobster and mache for about 15 minutes Eric proclaimed “Nah! I don’t like it!”
So what do you do with a dish that doesn’t turn out the way you’d like it?
“You Eat IT!” And that’s exactly what we did. I came back 2 days later and re-did the salad with black truffles. It definitely looked better. So what do you do after you shoot a dish that looked really good? ” You Eat It!”
