“My mom’s side of the family is Scandinavian and the oak tree in Norse mythology is a symbol of the tree of life. The lighthouse is a place I used to go as a kid for family picnics. And the octopus, for me, is a symbol of intelligence, ambition, and adaptation. It reminds me that things are always shifting. I always say, ‘Chefs are like athletes.’ Athletes constantly adjust, and chefs also must constantly adjust.”
