My trip to Cancun was the first of two trips to work on a book about the Moon Palace Resort and Pastry Chef Antonio Bachour who is my good friend and partner on his books. He was commissioned to revamp their pastry department. The hotel’s story is wonderful and very interesting, and the owner’s concern for the environment and social issues are incredible. It will be included in the book.  My job on this trip was to photograph the commissary where the food is prepared for the hotel.  It is the most organized, modern and efficient facility I’ve ever scene. Because the cost of living is cheap they are able to employ a lot of people for every job imaginable. Coming from New York and seeing all the cut backs it’s nice to see how many jobs there are here. Everyone seems to be very happy working there.

The other reason I was there was to get some photos of Chef Joan Roca, from Spain who was at the Moon Palace as a guest chef for two nights. His restaurant, El Celler de Can Roca won for 1st or 2nd Best Restaurant in The World by Restaurant Magazine from 2011 to 2015.

 Chef Roca’s food was beautiful and clever and tasted as good as it looked.
