Executive Pastry Chef Mauricio Santelice’s Worst Nightmare

“Everyone knows I’m pastry only, [but] I hate flour. Flour is the component that I hate the most – so messy, so dusty. Everybody tells me, ‘You’re the pastry chef and you hate so much flour.’ I keep telling all my employees, ‘Do not ever dust flour on the table. We’re gonna use spray, so it doesn’t stick.’ And when I have to work with flour and I’m covered in flour, I’m like, ‘Oh, my God!’

“I hate it, because when I grew up, my mother had a little bakery. And my duty was to clean the bakery after school. It was so dusty with flour. So I have an issue with flour. But it’s funny, being a pastry chef.”
