Country Pâté Sandwiches

Country Pâté Sandwiches by Gabriel Kreuther
Serves 4
  1. 4 individual pieces of panini bread
  2. 3 teaspoons olive oil
  3. 1 pound country pâté (duck, pork, etc.) or liverwurst
  4. 16 white anchovies
  5. 16 cherry tomatoes, cut into slices
  6. 1 seedless cucumber or Japanese cucumber, cut into ribbons
  7. Salt and pepper to taste
  1. Preheat a grill or grill pan.
  2. Slice panini into 2 pieces, split in the center lengthwise and brush with olive oil.
  3. Press it into grill and toast it until crisp. Remove and allow it to cool.
  4. Slice the pâté and lay it on the first half of the bread, top it with the anchovies lengthwise in the center. Add the tomato slices and the cucumber ribbons, (reserving a few of each for garnish), all around and let them drape slightly over the sides.
  5. Layer with the second piece of bread.
  6. Press and finish by making a line of cucumber ribbons and tomato as a center row on the top.
